Serves 4
1 large chopped carrot
1/2 head cauliflower
2 stalks sliced celery
1 large yellow oinion, diced
1/2 teaspoon each dried oregano and ground coriander
Add some minced garlic
Sea Salt and black pepper to taste
4 cups vegetable broth
Juice of 1 lemon
2 15oz Lentils, drained and rinsed
1/2 cup xtra-virgin olive oil
Add all ingredients to a large soup pot over med-high heat. Bring to a boil, then reduce heat to keep at a simmer. Cook for 20 min (enough time to achieve an Equestrian Edge Fitness workout). Stir during workout rest intervals.
